There are always new Italian specialties to discover And they dazzle us with their ode to simplicity and preference for local and Mediterranean ingredients (check out the castagnaccio , the polenta with mushrooms or the vegetable frittata , for example). On this occasion, we bring you Genovese farinata , a savory cake or pastry made from chickpea flour and a few other toppings. Originally from the capital of Liguria, farinata is also very popular in Tuscany and there are different versions in other countries (socca in Nice, kalinti or Moroccan “Calcita” or fainá in Argentina and Uruguay). The recipe itself is extremely simple. The only observation is that, when choosing the mold to bake it, you must take into account that the farinata is very thin: the result should be between 7 and 9 mm thick.

Pour the chickpea flour dough into the mold and stir lightly to combine with the oil. Add the garnishes, if you want them to remain inside the farinata.** Bake for about 40 - 50 minutes, until golden. Serve hot or warm. GRADES * You can use organic chickpea flour or make it at home with the legume directly, grinding it in a high-power blender such as Vitamix . You can add some toppings such as mozzarella or vegan cheese , cherry tomatoes or sun-dried tomatoes , red onion, fresh herbs such as basil, rosemary, sage...
